I thought I read that upgrading to the latest version would require me to rebuild my site because of all the changes. Is that true? My version is from 2017.

Yes, if you are upgrading from v5.x or below, then it is better to start from scratch as Canvas 6 has breaking changes and many structural updates for better flexibility.
