Is there something I'm missing within the setup to be able to play an uploaded (on server side) mp3 file when a link is clicked?
I'm talking not Soundcloud or YouTube, etc - just a built in music player for the page....

Unfortunately, Canvas currently does not include a Music Player. You can definitely consider using: http://www.jplayer.org/ for adding MP3 Files as it is compatible with Canvas.
