It seems that in most of the Canvas galleries, the last column in each row has the class="col_last" (could be the 2nd, 3rd, 4th item).
At least in our CMS, that makes it difficult or impossible to create standard code for each product/employee/item.
Does anyone have a way around that?

It is Highly recommended to use the Bootstrap Grid instead: https://getbootstrap.com/docs/4.3/layout/grid/ as the Custom Canvas Grid will be retired in Canvas 6 anyways. It is more easier to integrate and very flexible.
