Q1. No SCSS file corresponding to font-icons.css ( I know I can create scss by css). Any particular reason ?
Q2. How can I use FontAwesome SVG option.

The SASS File for the css/font-icons.css File is not required as they only contain Icon related CSS Codes which are not dependent on other CSS/SASS Files, so you can directly enqueue the Default CSS File.
You will need to use the Font Awesome SVG directly and along with the css/font-icons.css File: https://fontawesome.com/start as currently there is no option to delete the Font Awesome related icons individually from the css/font-icons.css File.

If you provide SCSS file for your font-icons, it just makes it more intuitive for your customers to import that it in a single scss file (thus single css file) and thus reducing the http requests. Just a suggestion. Page speed as the utmost criteria in this case.
Sorry, didnt quite get that. I understand that your font-icons are not font-awesome but something else, please correct me if Canvas theme uses font-awesome. Whatever icon-font I end up using, I want to ensure that I am using the SVG verison only. How to do that?

3. Any particular reason why font-awesome which is the preferred font icons set for Bootstrap – was not used and something else was used.
I just need to evaluate if I need to take the additional pains to go down that path which Canvas team decided not to go.

Thank You so much for the suggestions regarding this. We will definitely add this to Our Updates List and release them in our subsequent updates.
The font-icons.css File consists of a combined list of different Font Libraries generated using the IcoMoon App. It also includes the Font Awesome Icons. You can check out the available list of Icons here: http://themes.semicolonweb.com/html/canvas/icons.html . Unfortunately, we currently cannot provide support or pointers on how to use the SVG as this out of the scope of the Support Provided according to the Item Support Policy: https://themeforest.net/page/item_support_policy . So, you will need to use the Official Documentation from Font Awesome regarding this. While we think that there shouldn't be any conflicts.
Canvas was released in 2014 which included Bootstrap 3. And Bootstrap 3 included Glyphicons back then which we did not think that it added any value to Bootstrap except for increasing its size, so we unselected it from the Bootstrap Customizer and used a custom set of icons generated using the IcoMoon App. Since then nobody has complained regarding this and so we have continued using this and since this has been shipped with the Package for so long, we didn't remove or deprecated it. However, you always have an Option to include your own Font Icons with the existing list of Icons according to your own preferences as we have done in many other Niche Demos included with Canvas. Its completely flexible and conflict-free.

I have solved this problem for myself. Just FYI, if any of your other customers, who needs to fine tune performance -
The icon fonts shipping with Canvas are 500KB+ and cause 2 http request atleast (css file and font file)
