I added Google Analytics to my site (https://mutuistore.it), and since it collects the data I need to add a banner cookie. How can I do it in your theme? Can I give to visitor the opportunity to not collect his data? Where can I find the documentation?

If you would like to display a Cookie Notification you can consider using this Template: http://themes.semicolonweb.com/html/canvas/cookies.html, the cookies.html File in the Package/HTML Folder.
However, if you would like to allow the user to disable the Google Analytics, you will need to add Additional Customized Codes. You can check the Documentation for the Cookie Plugin included with Canvas here: https://github.com/js-cookie/js-cookie .
