Is there a list of available for the Canvas theme somewhere?

Hello,

Canvas uses Google Fonts: Lato, Raleway and Crete Round which you can find in the Header:

You can use any Font from Google Fonts: https://fonts.google.com/ . Also consider checking the Documentation > Start > Changing Fonts Section.
